Austin Carlson
Chef de Cuisine
Austin grew up in Cedar Falls and has a wealth of culinary experience. He has staged at prestigious restaurants such as Harbinger in Des Moines, IA, and top-ranked Rosemary in Chicago, IL. He has 10+ years of experience at local favorites, including Ferrari’s. Most recently, Austin held management positions at both Montage and Cedar Falls Brown Bottle. The knowledge and skills he has acquired will help deliver lunch and brunch offerings that are sure to impress Cedar Valley residents.
Vicky Dunn
Head Pastry Chef
Vicky retired from a career in food quality management in 2011, and decided to attend the French Pastry School of Chicago where she received her L’Art de la Patisserie degree. After moving to the Cedar Valley, Vicky focused on naturally fermented artisanal bread and pastries, which she sold at local farmers’ markets. Vicky also enjoyed sharing her bread-making skills and taught classes at Three Pines Farm. Most recently, she worked at Carter House and Montage.
